My favorite meal of the day! Quick and easy. No thinking involved… just prepare and eat! Rarely do I take the time to make a breakfast “recipe”. If I do, it will be breakfast for dinner. Or it will involve something I baked ahead, like muffins.
Give this breakfast plan a try, tweak it to your liking, or create your own!

MONDAY: Scrambled eggs + toast + kiwi
TUESDAY: Pancakes with sliced banana and walnuts
WEDNESDAY: Egg, cheese, ham, and spinach sandwich + orange
THURSDAY: Pancakes with berries and sliced almonds
FRIDAY: Scrambled eggs + toast crackers with jam + kiwi
SAT/ SUN: Oatmeal, Cereal or choose from Mon-Fri
*Drinks include: a small glass of juice, green tea, or coffee.
*For variety I may change out the types of pancakes that I use. Here are some of my favorite, just add water, mix and cook brands: Kodiak Cakes, FlapJacked, and Birch Benders. (You can find these products in most stores that sell groceries.)
*Variations on the bread used for toast and the egg sandwich include: english muffins, bagels, whole grain, rye or sourdough bread, raisin bread and crackers or crisp breads.
*Yogurt is always on hand to add to these meals if desired. (My kids especially love yogurt.)
