Breakfast Rotation

Rotate through 5 simple breakfast meals that are quick and easy to prepare.

BREAKFAST ROTATION

Breakfast, or brunch, is my favorite meal of the day and this rotation of 5 simple meals allows me to go on auto-pilot as I prepare this easy meal for my kids and myself every morning. We never get bored because there are plenty of ways to add variety to each meal by changing up the fruit, bread, toppings, etc. Rarely do I take the time to make a breakfast “recipe”. If I do it will be breakfast for dinner or something I baked ahead, like muffins.  

Give this breakfast plan a try, tweak it to your liking, or create your own!

MONDAY:  Scrambled eggs + toast + kiwi

TUESDAY:  Pancakes with sliced banana and walnuts 

WEDNESDAY:  Egg, cheese, ham, and spinach sandwich + orange

THURSDAY:  Pancakes or waffles with berries and sliced almonds

FRIDAY:  Scrambled eggs + toast crackers with jam + kiwi

SAT/ SUN:  Oatmeal, cereal or choose from Mon-Fri

*Drinks:  tea, coffee, or a small glass of juice.

*For variety I may change out the type of pancakes that I use. Here are some of my favorite, just add water, mix and cook brands:  Kodiak Cakes, FlapJacked, and Birch Benders.  

*Variations on the bread I use for toast and the egg sandwich:  english muffin, bagel, whole grain, rye or sourdough bread, raisin bread, crackers or crispbread.

*Yogurt is always on hand to add to these meals if desired.
